Fwfstab is a very nice OS application to edit /etc/fstab file that I hope it get's integrated in gnome. If you are using fedora, you can just type in the command line:

$ sudo yum install fwfstab
Once installed you can find it in the Applications-> System Tools menu.

I find it very useful to edit such an important system file safely. I actually found it trying to explain a newbie how to enable ACL in a partition.
